Healthy pancake recipe



In my book, pancake day is a holiday and I think it should be celebrated with a day off work in the same way as we do with a bank holiday. In fact there should be more food related holidays...burger day, pizza day, cake day etc...I'll keep on dreaming! I couldn't let it go by without 'celebrating' with a healthier pancake recipe for you to enjoy. Look at that melty, gooey chocolate...mmm.


Prep time 10: Cook time: 15 mins


Ingredients
  • 1 cup of dry/uncooked rolled oats (plain, unsweetened)
  • 6 egg whites (about ¾ cup)
  • 1 cup of 0% Greek Yogurt
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 2 teaspoons honey
Instructions
  1. Purée everything in a blender until smooth.
  2. Heat a non-stick skillet and add a thin layer of olive oil or grassfed/pastured butter.
  3. Pour batter into the pan and cook on medium heat, turning once -- just like regular pancakes.
Toppings
Anything goes for toppings really from strawberries and almond butter, or like me, nutella and marshmellows, if you're feeling naughty. Well,the pancakes are healthy so why not use that 80% good and 20% bad rule?
