When the days are busy and the fuse is short, everyone needs some good one pan meals to pull out of the bag. Especially as autumn rolls around, the light summer salads just don't cut it and we need hearty, healthy and filling meals.
This one pot wonder is just that! A gorgeous protein and veggie packed meal that will leave you feeling full and satisfied. It's also a winner for the kids, as it's potato and sausage, which are staples in this house.
For this Sausage and Gnocchi tray bake, you will need:
- 1 pack of sausages (veggie or meat)
- 3 x sweet potatoes (normal will do)
- squash (courgette works well, but equally butternut squash)
- red onion (or brown if that's all you have)
- one bag of gnocchi
- red pepper (or other colour)
- mixed herbs (rosemary, thyme, sage all work well)
- pesto
- tinned tomatoes
The recipe really could't be easier. Chop all of the veg, place it in a deep baking tray, put the sausages on top. Drizzle some olive oil all over. Sprinkle over the herbs. Splodge on dollops of pesto. Pour over tinned tomatoes.
Then pop it in the oven on a low heat, around 160 for an hour. Near the time you want to eat, brown it slightly with the grill if you think it needs it. Our sausages were nice and brown, so we didn't need to.
